In addition to spending as much time as humanly possible outdoors, I also love to cook. One of my favorite things to cook is pancakes, and on the second Saturday of the month you will generally find me at the East Lake County Chamber of Commerce cooking up pancakes and sausage for the community breakfast. Of course, this has changed now that we are social distancing. Serving pancakes to my friends and neighbors has become a bit more difficult — BUT NOT IMPOSSIBLE!
The East Lake County Chamber of Commerce has done a terrific job of taking our in-person events virtual. We’ve done a couple of our monthly coffees in a virtual format, and it seems to be very popular.
Last month, Valerie Valverde and I demonstrated making artistic pancakes in a virtual format we’re calling Pancake TV. This was really fun, and involved a Zoom meeting combined with a Facebook Live. I don’t know how Jeremy (Ashley’s dad and our Chamber president) did it, but through the magic of technology and his gigantic brain, it worked and we had a blast.
This month, I’m delighted that Valerie has agreed to join me again! Our May breakfast is sponsored by Catherine Hanson Real Estate, and we’ll be demonstrating three pancake recipes for Mother’s Day, and welcoming a very special guest. You can watch our video at the Chamber’s website, or on the Chamber’s Facebook video page. When it is available, I’ll provide a direct link to this morning’s Pancake TV.
You can find the recipes we used here: Lemon Ricotta pancakes, Mexican pancakes, and Two Ingredient pancakes. Which is your favorite?
